December has a way of sneaking up on us. One minute we’re thinking we have plenty of time, and the next we’re juggling holiday events, last-minute errands, and a to-do list that seems to grow every time we cross something off.

When life gets this full, the last thing any of us want is to spend hours in the kitchen or feel pressured to cook perfect meals.

This is where the “good enough” December pantry comes in. It isn’t about stockpiling or spending more money.

It’s about keeping a few simple items on hand so you can put together quick, comforting meals without stress. In a busy season, a pantry that supports your peace of mind is a gift in itself.

Below are a few small swaps and easy additions that make December feel lighter—no perfection required.

Swap Complicated Recipes for Simple, Flexible Meals

This time of year calls for meals you can throw together without thinking too hard. Instead of planning big recipes, keep ingredients that mix and match easily.

Here are a few that always earn their place on my shelf:

  • Canned soups that become instant lunches or bases for casseroles
  • Pre-cooked rice packets for fast dinners
  • Pasta and jarred sauce that take zero effort
  • Canned beans to bulk up salads, soups, or taco night

With these on hand, you can make a hot meal in minutes. No pressure. No fuss. Just food that gets you through the evening with your sanity intact.

Add a Few Shelf-Stable Comfort Items

Comfort matters—especially in December. A few small things can turn a rushed dinner into something warm and satisfying.

Consider keeping:

Place it where it's easy to reach, and make it your go-to on the days when life is overflowing. This simple basket keeps you from skipping meals or reaching for something that won’t make you feel good.
